  6. Guisar a fuego medio con la tapa un poco abierta de un lado para que pueda evaporar el caldo, probar y rectificar de sal.
  7. Teniéndolo durante una media hora habrá reducido el caldo, probáis y rectificáis de sal si fuera necesario, lo seguís dejando tapado durante 10 minutos con el fuego apagado para que repose. Si lo hacéis el día anterior estará mejor.
