- 1/2 pieza Cebolla blanca
- 250 gr Maciza de cerdo
- 250 gr Espinazo de cerdo

- 1 diente Ajo
- 3 piezas Pimienta gorda
- 3 piezas Clavo de olor
- c/s Manteca de cerdo
- 1 pizca Comino
- c/s Sal de grano
- PARA LA GUARNICIÓN:
- 50 gr Chicharrón de cerdo
- 1 pieza Aguacate
- 1 gr Orégano seco
- 100 gr Cebolla blanca
- 2 piezas Limón
- 200 gr Chorizo
- 5 piezas Tortilla
- c/s Aceite vegetal

- Nixtamalizar el maíz (en caso de comprar el grano sin limpiar); tatemar la 1/2 pieza de cebolla; cortar en trozos la maciza y el espinazo; limpiar y rasurar la cabeza de cerdo. Poner a cocer, de preferencia en olla exprés, durante 30 minutos; y la cabeza alrededor de 1 hora. Cocer el grano durante 30 minutos, en olla exprés, junto con la cebolla tatemada y sal.
- Para la guarnición: Sofreír el chorizo levemente, junto con cebolla y ajo, armar los tacos y freír en aceite, reservar. Cortar la cebolla en cubos chicos, reservar.
- Para el pipián: Cortar los tomates en mitad, al igual que los chiles. Limpiar el ajo y la pepita (cuando tenga cáscara gruesa). Freír los tomates y los chiles en una olla con manteca de cerdo, retirar y reservar.
- Freír las pepitas y las especias en la misma manteca de cerdo, retirar y reservar.
- Licuar las hojas de lechuga, epazote, espinaca y las ramas de cilantro con un poco de líquido de cocción del cerdo, o del grano (todavía un poco calientes); agregar los tomates y los chiles, licuar; agregar las pepitas y las especias, licuar; sazonar con sal.
- Agregar manteca suficiente a una olla, calentar, y sofreír el pipián, durante 20 - 30 minutos, aprox., hasta que haga "ojitos verdes", o que haga ligeras burbujas en la superficie; reservar.
- Colocar el caldo de cerdo restante en una olla, agregar la carne, maíz y una cucharada de pipián, dejar que suelte hervor.
- Servir con chicharrón de cerdo, aguacate laminado, lechuga, pipián para agregar al gusto, tacos de chorizo, cebolla y limón.
