- 1 kg alitas de pollo
- 1 pechuga de pollo
- 3 dientes ajo
- 1/2 cebolla

- Para hacerlo verde:
- unas ramas de epazote ($2.00)
- ramas cilantro($2.00)

- 1/2 cebolla asada
- 1 chile poblano lavado, sin vena ni semilla cortado en crudo
- 4 chiles serranos
- 150 gr. pepita de calabaza limpia (sin cáscara)
- 70 gr. ajonjolí tostado
- Guarnición
- rábanos
- lechuga
- cebolla
- orégano
- limón
- chile piquin
- tostadas
- crema

- Se lava y limpia perfectamente el pollo, las zanahorias, el perejil y las hojas de laurel, ya limpio todo esto se coloca en una olla bastante grande junto con sal, la cebolla y los ajos con bastante agua a hervir o hasta que el pollo está cocido.
- Mientras está el pollo, lavamos perfectamente el maíz pozolero y lo dejamos escurriendo.
- Sacamos el pollo y todo lo que se agrego dejando solo el caldo. Apartamos en el vaso de la licuadora 2 tz. De caldo.
- Agregamos el maíz pozolero a la olla con el caldo, se pone a hervir por aproximadamente 1hr. O hasta que el maíz se encuentre cocido.
- Mientras está el maíz, en la licuadora, junto con el caldo agregamos el tomate, los ajos, la cebolla, el epazote, el cilantro, la pepita, el chile poblano, los chiles serranos y el ajonjolí, lo muelen hasta que todo esté bien molido.
- Una vez que esté listo el maíz, se pone lo que se molió antes sin colar, también se incorporan de nuevo las alas de pollo y se deja hervir por unos 20 minutos más
- Mientras esperas a que hierva picas la lechuga, los rábanos, la cebolla, y los limones, desmenuza la pechuga.
- Al momento de servir se puede colocar alguna alita o un poco de pechuga desmenuzada (al gusto), se pone la lechuga, la cebolla y los rábanos al gusto, se muele el orégano con las manos, se exprime limón y si gustan chile piquín.
