- Enseguida cortar los tomatillos y añadirlos a una sartén con una cucharada y media de Manteca junto con los chiles asados y la cebollita cambray salpimentar y dejar hasta estar muy suave las verduras, una vez lista licuar junto con las espinacas el cilantro las especias y 2 dientes de ajo ya licuada la salsa incorporar en la misma sartén dónde hicimos el sofrito dejar alrededor de 5 minutos para que se concentren los sabores y reservar,

- Ya casi cocida la carne incorporar el grano y dejar hasta que la carne y el maíz estén totalmente suaves una vez blandito, verter la salsa mezclar y dejar de 5 a 10 minutos para qué integren los sabores,

- Pasado el tiempo servir caliente con la verduras y salsas de su preferencia

- Sí quieren hacer pozole blanco es el mismo procedimiento omitiendo la salsa)
