- Agrega los quelites, dales vuelta y pon la tapa. El agua debe estar hirviendo o de lo contrario se harán amarillos y tendrán sabor amargo. Están cocidos cuando agarres un cabito y esté blandito. Más o menos unos 6 minutos.
- Mientras tanto, en un molcajete pon los ajos y la sal.
- Muélelos.
- En cuanto estén cocidos los quelites, agarra pequeñas porciones y machácalos en el molcajete
- Continúa hasta que termines con todos. Una vez machados, échalos junto con su caldito, donde están las cebolla y los jitomates guisados.
- Revuelve perfectamente y deja que hiervan, sólo un minuto. Apaga el fuego. Sirve caliente, acompañados de tortillas calientitas, limón y salsa de tomatillo milpero (ver receta)
