  8. 1/2 cucharadita tomillo
  9. 1/2 cucharadita comino
  10. c/n lechuga iceberg
  11. c/n limones
  12. al gusto sal
  13. c/n tostadas o totopos

Steps to make to make Pozole

  1. Pon a cocer la carne de cerdo en la olla de presión con agua suficiente para cubrirla, 2 ajos, las hojas de laurel, 1/2 cebolla y sal al gusto, durante 40 minutos luego de que escape el vapor, deja enfriar la olla, saca la carne y desmenuza.
  2. Enjuaga muy bien el maíz y reserva.
  3. Retira la cebolla y el laurel del caldo de la carne, agrega el maíz y cocina durante media hora a fuego medio, pasado el tiempo incorpora la carne.
  4. Desvena y remoja los chiles en agua caliente hasta que estén suaves. Licúalos con 1/2 taza del agua de remojo, 1/4 de cebolla y 1 ajo, tomillo y comino, cuela y vierte la salsa en la olla, rectifica la sazón y cocina a fuego bajo hasta que los granos estén cocidos (revienten).
  5. Sirve con rodajas de rábanos, limón, lechuga y cebolla finamente picada, orégano, chile chiltepin molido y tostadas.
