- 125 gr maíz

- En olla agregaremos agua e integramos la mezcla de la chilmolera a la olla después, pondremos la carne.
- En lo que se cuece la carne en un comal tostamos el maíz y posteriormente se pasa al metate para molerlo.
- Después de molerlo se deja caer desde lo alto a un traste y se sopla suavemente eso nos ayudará a que se quite la cáscara del maíz y no quede en el guiso. De ahí dejaremos remojar el maíz en un poco de agua por 15 minutos
- Tostamos los 3 guajillos y después le quitaremos la colita y semillas. Tomaremos un poco de caldo de la carne y con eso licuaremos el guajillo.
- Lo pasamos por un colador y lo vaciamos en la cazuela con la carne al igual que el maíz que habíamos remojado
- Dejemos en el fuego hasta que el maíz se ablande agregaremos aproximadamente 4 hojas de pitiona, dejamos 5 minutos y lo apagamos. Y listo a ¡disfrutar!
