  5. Las cerramos envolviendo la masa a formar paquetitos y los colocamos en la vaporera y los dejamos cociéndose una hora.
  6. Preparamos una salsa de CHILTOMATE * que nos va a servir para colocarla como espejo bajo los tamales y preparamos un ESCABECHE para adornar
  7. SALSA DE CHILTOMATE: Ponemos a hervir 4 jitomates, un pedazo de cebolla y un diente de ajo. Pelamos los jitomates y los ponemos en la licuadora, se muelen y se vacían a una ollita con un poco de aceite a que se refría. Añadimos uno o dos chiles habaneros simplemente cortados a la mitad sin semillas a que hiervan con el jitomate. Agregamos sal y pimienta. Se le puede poner cilantro pero yo la prefiero sin él.
  8. Y preparamos un ESCABECHE con cebolla en medias lunas, un poco de agua, vinagre y orégano y la desflemamos en la lumbre un poco, lo usamos para adornar
  9. Es un platillo que tiene un sabor muy especial.
